Chocolate tiramisu

Few days ago i promised my brother and sister that i will make something sweet. I have remembered a tiramitsu recipe that Jamie Oliver made in one of his shows and since my sister loves chocolate i have decided to try it. Here it is.

Base

Being a chocolate tiramisu this recipe will not use the classic lady fingers. Instead we will make a chocolate sponge. For this we need:

110 gr iced sugar
4 eggs
85 grams of flour
30 grams cocoa powder
50 grams of melted butter

Preparation:

Preheat you oven.

Mix the eggs with the iced sugar for a couple of minutes until it’s fluffy.  Add melted butter, sieve the flour and cocoa powder over you composition and mix everything until thoroughly incorporated.

Pour the composition into a tray and pop it in the oven. Use some baking paper to make sure it does not stick to tray. Cook for 8-10 minutes.

Filling

Ingredients

100 gr white chocolate
50 ml double cream
500 ml mascarpone cheese
2 egg yokes
75 gr iced sugar
150 ml strong and sweet coffee
3 shots of brandy

cocoa powder for dusting
dark chocolate to grate over the top

Preparation

Place the white chocolate and double cream into a bowl over a boiling water pot. Stir occasionally.

In a large bowl put the marcarpone cheese and the iced sugar and mix with a spatula. Add the egg yokes and mix together. Mix in 1 shot of brandy.

Place your chocolate sponge into a large serving dish to cover the bottom. Drizzle over the coffee and 2 shots of brandy. Pour over the white chocolate and on top of that pour the mascarpone mix and flatten it out.

Dust with cocoa powder and grate some dark (look for one with at least 70% cocoa) chocolate over.

Chill it in the fridge for about 3 hours.
